Sausage & Grits Quiche

A whole breakfast in one pan! Who doesn't love that? This hearty breakfast casserole has it all - meat, cheese, grits, eggs, and flavor. You can do so much with this dish: try different meat options, cheese flavors, herbs, seasonings. This is a great basic recipe for whatever mood you're in. I have a large family, so I double this recipe and bake it in a 9x13-inch casserole dish. Works for us!

To prepare the grits, bring water and salt to a boil in a saucepan. Stir in the grist and remove from the heat. Cover and let stand for five minutes. This mixture will be thick, unlike the grits you usually have for breakfast.  
In a large mixing bowl, beat eggs well.

Add remaining ingredients to the eggs and mix well. Pour into a baking dish and top with extra cheese if desired.

Bake in a 350° oven for
30-35 minutes.

Sausage & Grits Casserole
Ingredients:
½ cup water

¼ tsp. sea salt
1⁄3 cup quick-cooking grits, uncooked

12 oz. evaporated milk
1½ cups chopped sausage or ham

1 cup cheddar cheese, shredded
3 large eggs, lightly beaten
1 Tbsp. fresh parsley, chopped
1 tsp. dry mustard
1-2 tsp. hot sauce
Directions:

Preheat oven to 350°F. Bring water and salt to boil in saucepan. Stir
in grits. Remove from heat, cover, and let stand for five minutes. Mixture
will be thick. Combine grits with remaining ingredients. Pour into greased
quiche dish or deep-dish pie pan. Bake for 30-35 minutes. Let stand 10 minutes before serving.
