Citrus Roast Chicken

Citrus Roast Chicken

Ingredients:
2 limes, cut into quarters
4-6 whole garlic cloves large
handful of thyme leaves
4 lb.
whole chicken
juice of 1 lemon
sea salt and fresh ground black pepper
3 Tbsp. olive oil

Directions:


Preheat oven to 350°F. Place the lime, garlic, and thyme into the cavity
of the chicken. Place the chicken into a roasting pan and drizzle the
lemon juice over the chicken. Season well with salt and pepper.
Drizzle with olive oil and roast for 2 hours.
